Well... WCW vs. The World was ok. But of course, you're referring to WCW Nitro and WCW Thunder, which are, quite possibly, the two worst wrestling games ever released... and in a world that has WWF Wrestlemania for NES and WCW Backstage Assault that's saying something.

Well, yes and no. Def Jam isn't a wrestling promotion, so I don't think there needs to be a ring. A game licensed by a real promotion should have a ring. Even the fucking awful Backyard Wrestling games had a ring (in some stages).
