Got it.
1) You don't look quite like you... Many character designs in the game have been changed to better fit the modern Story of Seasons aesthetics. Some are more subtle, like Popuri having a dress better fitting someone who works with live animals. Some others...well, here's Duke, the vineyard owner in GBA and remake official art iterations.
2) Sell stuff to unlock more stuff Selling enough of some herbs will unlock better drinks for healing your stamina at the hospital, selling enough of certain seasonal crops will unlock seeds for an additional crop type at the store, that kinda thing.
3) Questionable pet trade Once Van has been unlocked as a vendor he will stop by the town square on the 15th of each season (weather permitting) and sell pets of one particular species depending on the season. Cats and dogs are expected, but the other two types are penguins and capybaras.
4) Mortality is overrated anyway. Unlike past games your animals won't die.
5) The remake of an adaptation of a game constructed from existing assets It's a remake of Harvest Moon: Friends of Mineral Town (and its sister game merged together), which itself was an adaptation of the PlayStation (one) Harvest Moon: Back to Nature, which reused and repurposed characters and renders from Harvest Moon 64.
6) Nobody gets married! 'Cept you and which eligible candidate you want. There are still some ship teasing events, but you can no longer lose love interests to rivals in this game. 'Cuz something about Japanese fans being unhappy with breaking up couples to marry who they want.
7) Shavin' wabbits You can now keep Angora rabbits in the chicken coop and sell their sheared wool for profits. Other livestock new to the remake are alpacas and cows that give flavored milk.
