So I finished clearing the base game with every combination of faction, and had fun doing it; my above predictions were correct that none of them proved particularly difficult for me by that point. Only at the end did I start getting a little tired of it, and ultimately put it down after that.

I have my two Last Divinity clears still and haven't racked up a third. I've thought about going through and using the covenant and beating Seraph without getting to 100, just to unlock more gold card borders, but haven't really followed through yet. But the game has become automatic enough that I can listen to (some) audiobooks while playing, at least, so I may rotate it in alongside Picross and Puzzle Quest as one of my rare Mindless Games.

Anyway, it didn't have a long tail for me as far as desire to keep going at it, but it's still a good game and fun, and come to think of it, I have very few complaints. A+!

FWIW, some of the later covenant levels mix up the gameplay in pretty significant ways. That said, nothing wrong with enjoying your time with a game and calling it done.

Yeah, maybe I'll try unlocking some of those too... Good call. OK I'll keep poking at it, especially since Slay the Spire fell completely flat for me so far.

If you ever make it to... I want to say Covenant 20, then the Expert Challenges open up, and those are what gave the game such a long tail for me, where each run is mutated in specific ways and the challenge is to tailor your run around the specific changes.

Fortunately, unlike STS, covenant levels are unlocked across all factions.

The modifiers used in the challenge runs should be available at any difficulty (except maybe covenant 0). If you want to see the different ways you can mix up the game without going through those unlocks, you can take a peek there. The Expert Challenges have some very deliberate combinations of those modifiers, though.
