Not exactly the sort of role I was thinking, but I guess I stand corrected.

OK, finished Horizon Dawn Zero and it didn't even take me three FULL months.

So what is next:

The Legend of Zelda: Breath of the Wild - I'm told it's pretty OK.
Wrecking Crew - I'm more than half-way done anyway.
Cities Skylines - City simulators is a genre I'm not too familiar with. I vaguely remember playing some SimCity as a kid but mostly trying to get a Bowser attack to happen. It's one I've meant to try someday.
Hack n Slash - I was gifted this one a long time ago but I have no idea what it is about.
Outer Wilds - I feel like I conflate this with another game with "outer" in the title. But I don't know what it is.

Loki said exactly what I was going to say, on both counts. BotW is a very similar game to Horizon, and Outer Wilds is one of the best games of all time.

Yup. And BotW is also one of the best games of all time, and it would be a shame to go into it with open world fatigue.

Wrecking Crew, especially if halfway done (save states I guess?) shouldn't take any time at all I assume? Just knock that out.

Breath of the Wild is amazing but I agree with not giving yourself open world fatigue.

Haven't played any of the others, I own Cities Skylines but the computer I had when it was gifted to me couldn't handle it. I should give it another shot.

I'd concur on not jumping directly into BotW after finishing Horizon. Outer Wilds is what I'd recommend but I haven't played the other options.

Cities Skylines is my vote but in my experience you might spend some time just learning how to play it. It isn't as immediately digestable as SimCity.

Mario Kart 8 - You know, with the announcement of the new Mario Kart, I realized I never played the solo mode on the last one!
Wrecking Crew - Have beaten 3 levels since the last time!
Cities Skylines - It's a genre I've always meant to get into.
Gone Home - A walking around and reading game that will make me cry but in the good way.
Orbital Racer - A racing game but in space. I genuinely don't remember who gave me this one or if it was in a bunch of steam code giveaways (I really have trouble saying no to free games). Actually, it looks neat.

Wrecking Crew - Still hangin' in there.
Cities: Skylines - I guess this is supposed to be a bit tougher than the other similar city builders but really I wouldn't know. I just want to make a city.
Hack n Slash - I don't know much about it but I guess the Reboot IP is still going strong!
Portal - Hey, a game I've played. And finished in an afternoon back when it was new. But I could do for a replay (still never played the sequel).

I vote Echoes of Wisdom. It really does switch up top down Zelda wild ways. Also Happy Belated Birthday!

I'm done with Wrecking Crew. There were two levels where I saw how the player did it but I don't know if it's ridiculous bullshit timing or if that timing actually shifted when it made it onto the Switch but there were two levels I found incompletable. Luckily the game is kind enough to let you choose your levels.

What should I do next?

Animal Crossing: New Horizons - I've played it but outside of bugs and fish I didn't get REAL far. Maybe it's time to dip back in for a bit. Maybe give it a couple more weeks of time before taking another break
Double Dragon II - Twice the number of Two Dragons.
Cities Skylines - Time to dip into city-building sims?
Hack n Slash - I guess this is a clever Zelda-pastiche
Portal - Just give it a playthrough again.

I tried Hack n Slash three times, and always stopped pretty soon. Just couldn't get into it. So I would be curious, if you have the same experience, or if you can explain how to enjoy it.
So that's my suggestion.
