Some are better than others, for sure. I think my first exposure to the concept of turkey sausage was at a Bob Evans while visiting family in Illinois, so there you go. But nowadays I think even Italian turkey sausages are about as good as pork ones, although the taste and texture are very different.

can you be sure though? How does it compare to peacock? Does it stack up to the elusive dodo? Can it hold a candle to a california condor stuffed with caviar?

Overrated. We stopped eating turkey for Thanksgiving years ago. Gave up cooking anything more than cinnamon rolls in fact. Just do relish trays of veggies and sausages. Never much cared for turkey other than as filler for sandwiches.

Under. But it's tricky. I agree with JBear that a basic ass bird is fine but best used as a vehicle for other things. Dark meat helps a lot. But my Sobey's used to sell a roast turkey breast that was shockingly flavourful. I'll also recommend a brined turkey, though I know that might work against my argument; it turns turkey into a ham that looks like a turkey. Delicious, though.

Under. It's easy to fuck up a turkey, which is probably why so many people are quick to dismiss it, but a turkey that's been made well is absolutely delicious.
