Breath of the Wild 2 and Project Triangle Strategy are the two upcoming games that I'm most interested in. I would love more AC New Horizons stuff (Blathers!). Deltarune is certainly something I'm interested in but I can't for the life of me imagine why that would show up at E3. A Ring Fit expansion would be cool.

As for remakes and rereleases, I'm pleasantly surprised when I go through my mental list to realize so many games I loved have already been rereleased/remastered or are coming soon: Secret of Mana, SD3, Legend of Mana, TMNT Arcade, Mass Effect, Halo. I'm sure I could think of something if I really tried, but kind of surprised to realize I don't have a strong wish list right now.

Forspoken ("Project Athia") has a slick new trailer which ends by rebranding it to "Final Fantasy Versus XVI".

I just refreshed my memory on Forspoken/Althia and now that I remember what it is, I'd settle for a new info and trailer package for either FFXVI *or* it. Both would be gravy.

Nioh didn't grab hold of me as much as I hoped it would in the long run, but I trust Team Ninja to make a passable Final Fantasy action RPG far more than I would many devs. If it's real I'm sure it'll be much better than Final Fantasy Explorers was.

In all seriousness, I wouldn't be surprised if/partially expect that Breath of the Wild 2 was scrapped/redesigned to be its own independent thing, with no links to the original. Pun intended

The initial sales pitch seemed like it was supposed to just be a Majora's Mask kind of thing where they reused assets to make a quick sequel. But it's been over 4 years since BotW came out with pretty much no info in sight, and they don't even have the excuse that BotW and TP both had where they tacked on another year of development so it could be a launch title for a brand new console.

It feels very much like they looked at their quick and dirty sequel, kept trying to add things to it to justify it being a whole game at full price, and got to the point where they realized they might as well just make a whole new game anyways because of how much stuff they were adding/changing.

It's only been two years (one of which was consumed by a global pandemic) and Nintendo has been playing their cards particularly close to their vest lately. Sometimes they don't even announce games until they're a few months out. I wouldn't read too much into the literally nothing we've heard about it.
 
"they kept trying to add things to it" is probably the story for all 3D Zelda development. I think it is inherently protracted, for whatever reason, and apparently there hasn't been a huge incentive to root out those causes. There's probably also a lot of weight on the Zelda team's shoulders.
