oh for those adventurous/dedicated/adjective enough to go out into making their own cheese substitutes you could try:

I've actually not tried anything from the book, but I've had experience with similar things and it's often like, a good enough illusion? idk I don't want to sit here and say "it's a good substitute" lest I call upon the ire of the internet anti-vegan brigade or whatever but it's a decent way to replicate cheese-ness without eating dairy. I'd have to check back with how much of it is gluten free. I'd suspect it is in general though.
