If you want cheese curds in America that are worth a damn, you basically have to go to Wisconsin or Minnesota. Spicy brown mustard on brats is also a WI/MN thing.

There is a NW-style cheese curd but it's not as rich, hard to describe the difference but they're not quite the same.

I thought I'd shared this anecdote on TT ages ago, but I quick search implies otherwise, so enjoy:

Let's talk about mashed potatoes. My parents and I went to a big thanksgiving pot luck back in October, and there were 4 different mashed potato dishes on offer. After the meal (which was delicious), my mother noted that I hadn't had any of her mashed potatoes, and complained how all of the other mashed potato dishes were odd-looking. I explained that that's because they add butter and milk, and she looked at me like I was crazy. You see, at my folks' house, mashed potatoes means that you just literally mash the potatoes.

That's it.

Heat, mash, and serve.

And folks wonder why I used to have bland tastes. I didn't find out what mashed potatoes means to the rest of the world until I moved out of the house in my 20s.

I grew up on a potato farm too, so we had mashed potatoes, and every other kind of potato, quite a lot.
