Onions are good. Cooked onions are an perfect compliment to most savory proteins.

I don't hate raw onions, but I generally avoid eating them. The flavor is fine, but the lingering aroma and flavor in my mouth and on my breath aren't my favorite.

We generally only get Walla Walla Sweet Onions and they're great.

Scallions/Green onions are tasty but more... breakfasty/brunch maybe? And soups? Lighter? I don't really know the word for what I'm trying to say here.

Shallots seem to mainly come up in slow cooker stuff. I have to admit that other than the size difference I haven't noticed much difference between those and onions.

I like onions when they're cooked or raw in very small doses. Raw onions in salads or on top of hot dogs and cheeseburgers are not my thing, it's the texture mainly.

I love me some onions and onion relatives. I like 'em raw (in reasonable moderation), I love 'em nicely browned, and I adore 'em properly caramelized. I like to whip up a huge batch caramelized in the crockpot periodically, use some, and freeze the rest in batches for continuous access.

Honestly that's a great thing to use my Crock pot for now that I'm using my Instant Pot most of the time. Would make a great component for steak tacos too
