I remembered that someone said the Kitchenaid was good for making shredded chicken and tried that last week.

It is very good at it.

So good that I flew too close to the sun and accidentally made some sort of chicken meal porridge. Oops.

Tweaked the dish I was planning on making and ended up getting some nice lunches out of it but lesson learned. I keep being in awe of this mixer's power after years of using a little hand one.

I recently bought an Instant Pot and I'm already sold on this contraption.

Earlier this week I made some pork ribs, and in about an hour I had some of the best ribs I've ever made. Coated the ribs with a spice rub, added a cup of water, half a cup of apple juice and a teaspoon of liquid smoke to the bottom of the pot, added the ribs to the rack insert, cooked on high pressure for 30 minutes, let the pressure reduce naturally for 15 minutes, then slathered the ribs in BBQ sauce and stuck em under a broiler for a few minutes to get a bit crispy. Crazy tender, but still had just enough firmness that they didn't totally fall apart.

Just now I made some black bean soup for lunch, using dry unsoaked beans, in about the same amount of time. Wild.

Tomorrow I'ma try Tikka Masala with some bone-in chicken thighs.

I honestly wish I bought one sooner. Why do I even still have a slow cooker?

I suddenly had instant pot vegetable steaming inspiration today:

set it to sautee while you prep the veggies n_n (and turn it back off if it gets to boiling)
