an oolong called Iron Goddess of Mercy
I regret to inform you that I'm in Brooklyn, but if you want to get some tea from the opposite end of the country it all came from Long Island-based Serendipitea. They have a charmingly dated website, but we've had some of their tea before and it's legit.Am I correct in thinking you're in the Seattle area? If so, what's the name of that tea distributor?? :3
Oh good, I'm glad there's already a fan on here. I've never made oolong before, do you do the whole "rinse leaves first, short steep, then long steep" thing? I want to get it right!Tie guan yin is fantastic! One of my favorite oolongs! Enjoy!

That's a steep requirement...The steeping instructions on their website for that particular tea say the first steep should be 30-60 seconds, and the second for four minutes. 195-205 degrees.
Two of them, even. That's a steep requirement...
Heck! The steeping instructions on their website for that particular tea say the first steep should be 30-60 seconds, and the second for four minutes. 195-205 degrees. So I dunno!
