So my mom bought a ton of green apples while she was visiting for Christmas and then only ate two. We have ten green apples to use up! I don't enjoy eating them as-is like red apples and only have a couple salad recipes that use them. Does anyone have any recommended recipes that use green apple? Any ideas appreciated.

Apple cake or homemade apple sauce seem pretty obvious. Half-and-half shredded green apples with cabbage (and cider vinegar, oil and your choice of spices) makes a lovely slaw that I like to put on fish tacos. They also work for cider sausage (sauté onions, garlic and sausage, add apples, cover with sweet cider, cook until syrupy, serve with fluffy bread).

Ah, this is true! We've had a ton of sweet stuff over the last couple weeks and still have a lot more in the house so not quite what I'm in the mood for but very good point.

Oooh, I didn't think of putting them in slaw. That sounds perfect.

This also sounds perfect! And reminded me we still have some horseradish from the garden that would compliment this well.

Oh yeah I forgot baked apples exist! Like with the pie we've had a lot of sweet stuff recently but I need to remember these are an option.

We just made a huge batch in November but good point and now I do want more, hmm. People are always baffled when I say we put apples, chocolate and coffee in our curry.

The full list of stuff that goes in Japanese curry really does kinda feel like someone hit random and get lucky or was doing seemingly arbitrary things for RNG manipulation or something. Well, chocolate people just need to put in more savory dishes broadly, but the rest? Yeah.

Oh yes of course. Honestly I'd kind of forgotten that's not a standard ingredient, ha.

I love that at this point if we have friends over I demand they tell me their food allergies even if they don't think it's relevant. I have defaulted to using decaf coffee even though I doubt one cup of coffee in the entire batch is enough to bother anyone. Easy enough to do and people are happier.
