The Bo-Katan stuff is fine. Maybe even an ideal thing to explore along with Mando. Mandaloreans as a society/culture come from Clone Wars, it would make sense to explore that stuff. Same with setting the stage for the rise of the First Order - that is literally a part of the setting, and there's good precedent within Star Wars itself to have successful interstitial works fill in the gaps and better bind the films together.

The problem with Boba Fett/Mando S3 is that the title characters take a back seat in their own shows in order to explore that stuff. They're like passive observers and don't get to do as interesting things in either the plot or dialog. That's a much more fundamental flaw than simply the show exploring the wrong ideas in the abstract.

All of the Clone Wars/Rebels stuff making their way into the live action stuff is really fascinating and at the same time very questionable. I think a lot of it works, but a lot of it also will make most of your causal audience feel various levels of alienation, and I dunno if that's a great idea for a gigajillion dollar mass media IP. I'm also morbidly curious what Dave Filoni's whole deal is too. Like, is this his ego showing? Or is this a Tomino-style dedication to the *real* fans that stuck with him since day one? I dunno if we have much precedent or parallels we can even compare this scenario to. What a weird time to be alive and be a Star Wars fan.
